• lemons(1/3)    2/3 cup sugar
  • (1/3)    2/3 cup lemon juice
  • (4 1/2)    7 cups water

For fussier preparations, heat the sugar with a couple cups of water on the stove till sugar is disolved, before adding the lemon juice and the rest of the water.  This cuts down on the need for a pre-pour shake and looks a bit less cloudy.



1/2 cup butter (softened)
1 cup sugar
1 egg
1 teaspoon vanilla extract
2 teaspoons baking powder


preheat oven to 350 Fahrenheit
Mix together butter, sugar, egg, vanilla and milk Then add baking powder and flour.
Shape (by hand or roll) dough into flat circles, about a 1/4 inch tall and 3-4 inches diameter.
Place a spoonful of filling in center and fold three sides towards the center. Pinch partially closed and spread out on greased (or papered) baking sheet.
bake 15-30 minutes till light brown

Pour hot water over prunes and raisins till they are covered.  Let sit for a few hours (or more).  Drain. Chop by hand or throw in blender.  Add honey and lemon juice

Apricot Filling

  • 1 lb dried apricots
  • 1 cup honey
  • 1 tablespoon orange rind, grated
  • 3 tablespoons orange juice

Soak apricots overnight in water to cover.  Drain, then puree, Combine with honey, orange rind and juice.

Poppy Seed filling

  • 1 cup poppy seed
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 apple (tart) grated
  • 1/2 cup sugar

Boil milk and poppy seeds, add butter and honey, and boil until thick.

Cool, then add grated apple.

Prune Filling

  • 1 lb pitted prunes
  • 1 cup raisins
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon rind (ground)
  • 1/2 cup sugar
  • 1 tablespoon honey

Soak prunes overnight in cold water or for two hours in hot water.  Drain.  Chop prunes and raisins.  Mix all ingredients thoroughly

2 cups flour
2 teaspoons baking powder
1/4 cup (4 tablespoons) butter,  oil, or  shortening
1/2 teaspoon salt
3/4 cup milk


Preheat and bake at 400 degrees Fahrenheit
Mix all the dry ingredients together thoroughly.
Blend in the wetter ingredients, trying not to over stir.
Drop by large spoonful onto cookie sheet or a  reasonable  facsimile.  (No need to grease pan)
Bake 12-15 minutes until golden.
