carrot muffins

Preheat oven to 350 f.

Prepare muffin tins (grease or line)  Makes 1 dozen large muffins.

Ingredients

  • 1 cup soaked raisins     {Cover raisins in warm water and soak for about (at least) ten minutes. Drain.}
  • 3 cups grated carrots     {peel and then shred / grate the equivalent of 3 large carrots}
  • 4 eggs
  • 3/4 cup vegetable oil
  • 3/4 cup brown sugar
  • 2 cups flour
  • 1 tablespoon  baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • optional 1/4 teaspoon nutmeg, allspice, cloves, or ginger *

Directions

Combine eggs, oil and sugar and mix well.

Stir in baking powder; soda; salt; and spices, and then the flour.

When blended, spoon into prepared muffin cups and bake for about 25 minutes.  .

Cool
